Seems that every time I make them I get awarded this 'no, THIS batch is the best one you've ever made' award, must post recipe before I forget (or stop fitting into my track pants.)
Heat oven to 190 Celsius fan forced.
Ingredients into the Kitchenaid mixer:
1 cup salted butter, softened at room temp
1 cup white sugar
1 cup brown sugar
Cream all above together in a mixer, and prep the following in a bowl:
3 cups flour
1 tsp each salt and baking soda
1/2 tsp baking powder
(Stir around to mix)
Once butter and sugar is combined add:
2 eggs
2 tsp vanilla extract
Mix in mixer until combined and a bit whippy looking.
Slowly add the dry ingredients to the mixer as it mixes.
(If you're like me and love cookie dough, this is where you would remove a cup or two into tupperware, label them as 'nothing' and put them in your freezer for snacking on later.)
Then add:
2 cups of chocolate (dark and white) chips, or buttons
Combine in mixer.
Put 2-3 tbsp portions onto lined baking sheet.
Place in oven for 8-10min or until *JUST SLIGHTLY* starting to brown. This will keep them chewy and gooey (and family award winning).
Pull them out, let them rest for two minutes or so and then you can move the cookies on the baking paper to a cooling rack or just off of the warm tray. Let them set for a few minutes more, pour a glass of milk, and you are good to go!
