I've been wanting to slow cook some chicken for a while; lucky for me Instant Pot means there's no slow about it - and the KIDS ate it too! Winner winner, chicken dinner.
Ingredients:
900g (2lb ish) chicken breasts or thighs
1/2 can coconut milk (150ml)
3tbsp apple cider vinegar
4tbsp garlic chopped
2tsp salt
2tbsp avocado/olive oil
2bay leaves
[Plus
Rice +
Palm Sugar +
other 1/2 can of coconut milk +
Broccoli/Cooked Greens/Cilantro garnish]
Method:
Do a pot-in-pot cook method to make some rice while you prep the rest of the ingredients.
[I did 1.5 cup rice, in 1.5 cup water, with 1 cup water in the bottom - 6min + slow release]
Chop all the above, into a bowl, and let chicken marinate for as long as you like (1 hr max out of fridge)
Remove rice, empty water, add chicken to Instant Pot
Manual pressure for 12 minutes, quick release, remove chicken, shred with fork.
While chicken is cooking, steam some vegetables on the stove (chopped broccolini for the win)
Turn on Saute and cook down the liquid into a sauce. I added a tbsp of palm sugar and 1/2 cup coconut, let it reduce for 10 minutes or so.
Serve in bowls: Rice, chicken, sauce, veg, squeeze of lime, sprinkle of cilantro.
