One Pot Dinner Winner - Tuna Casserole

tuna casserole pasta dinner for quick night meal ideas
red + orange tomatoes make it look fancier than a one pot wonder.

This dish isn't for everyone, but I grew up on it, and it's simple and quick. If you're reading this and don't have children, skip the next sentence, you'll find it unethical. Parents, I find that ensuring your kids are REALLY hungry before dinner, is the key to getting them to try anything.

Ingredients:

1 x bag of pasta (spirals, bows, surprise yourself)

1 x can of Cambell's Cream of Mushroom soup

1 x head of brocolli (or green veg)

1 x can of tuna in spring water

1/2 x onion chopped

1 x tomato chopped for garnish

1 x splash of milk optional

Method:

This is the beautifully simple efficient part, read carefully:

1. Place a large pot of water (with salt) on stove and boil

2. While water heats up, chop up broccoli into teeny tiny bitesize florets

3. Add 3/4 bag of pasta to boiling water, set timer for 2 min less than suggested cook time

4. Meanwhile, chop half onion and tomatoes, drain tuna, and open soup can.

5. When pasta timer goes off, place broccoli into pasta water to cook for 2 minutes.

6. Drain most of the water out of pasta/veg pot, leave 1/2 cup in to help coat pasta

7. Place pot of pasta/veg back on stove (heat off), add soup, onions, splash of milk, stir.

8. Taste and salt if needed. Serve in bowls, garnish with tomatoes, grated cheese, etc.

That took like, 10 minutes to make?? And one pot to clean?? AMEN. Bon apetite.
