Donna Hay's winning recipe here. Quick version below:
Ingredients:
1 x Onion, Carrot, Zucchini - blitz all in food processor
1 x can chopped tomatoes
1 x can pureed tomatoes
1 x can kidney OR black beans
1 x tsp ground cumin, coriander, paprika, salt, pepper
1 x tsp maple syrup
Some avocado, sour cream, shredded cheese
1 x pack wholemeal wrap tortillas + olive oil
Filling:
Saute blitzed veg in olive oil until soft.
Add spices, stir.
Add tomatoes and beans, syrup
Taco shells:
Oven convection 180c
Olive oil on both sides of wraps
Wraps on ramekins, tie with string to keep small
Bake for 10-20 min until brown and crisp.
The why:
A friend of mine with three children recommended this recipe as a kid's dinner idea. I read the ingredients and laughed. There was no way I would get a dish consisting only of veg and beans (BEANS!) to be child approved. The trick she said, is to make sure they're "really hungry" - genius! And a winner they are, big kids and small.
I top the adult version with avocado, jalapenos,fresh coriander, sour cream, kid version with avo and cheese.
